Lemon Grass With Black Chicken Soup

A couple of weeks ago, was thinking what soup to boil for dinner. Then I remembered that we still have half a black chicken. So, I browsed through the confinement recipe cookbook to see whether are there any new simple soup to boil. Came across this recipe where they were recommending to use one old chicken. Well, will have to make do with the half black chicken.

Steps and ingredients are simple.

Ingredients:-

  • half black chicken
  • 2 stalks of lemon grass
  • 50g pounded peppercorns
  • 5 shallots with skins removed and crushed
  • 1000ml water
  • 1 bowl of white rice wine

Cooking Steps:

  • Blanch chicken in boiling water and drain
  • Put all ingredients and chicken into pot and boil for 2 to 3 hours.
As usual, my wife loves it. So does my maid.

Oh this is new to me. My MIL only boil lemon grass with pork belly soup.

Ooo..I did not know lemon grass can be used as one of the soup ingredient. I wonder how is it taste like?
And can I cooked it without using the white rice wine, coz my husband dislike the taste.

This is a very clean taste soup to me with very prominent lemon grass and garlic taste. I would prefer to add a pinch of salt to it although you don't see it mentioned in the ingredients. I guess you can omit the white rice wine and try since all confinement food do include wine as part of the ingredient. For me, I add chinese wine into almost all my dishes if I can. I have tried cooking the pork belly soup too with lemon grass and lots of peppercorn. But a lot of work needed to clean and blanch the pork belly to get rid of the smell. The first time I tried was a disaster because of the smell. And the pork belly doesn't come cheap either.

I love pork belly very much, but I think the cleaning process is very tedious.
